What does Phyllite and Clay powder do for JS?

I know you can make JS without phyllite or red clay but what is the difference? Does PH change? I'm thinking the JS WITHOUT the rock/clay minerals will be very acidic and without nutrient availibilty.. Thank you for the time and knowledge.
