How to collect and store seedsYoungdong Lee, Jangheung, Jeonnam of Traditional Seeds Research Group, caring for 50 species
You collect the best of the seeds. Best ones should be stored and the rest are for food. It's very important to dry the seeds for storage. Dry them in a well-ventilated, shaded place.

For seeds in fruit, after-harvest ripening process is needed. Pick cucumber or squash when they are fully ripe and let sit for 2-3 more days before collecting the seeds. For cereals, let them dry first and then thresh them. Keep them in tightly-sealed containers without moisture. Store them in dark and cool place. 

Adzukis and mung beans should be kept in cold storage because they are vulnerable to insect infestation. For seeds that were kept in the cold, bring them out and let them adapt for a day or two before planting. 

Seeds are living beings. It is not good to keep them in cold storage for too long. 

Local is best. It is best to keep planting a seed from the region in that region.
